A hump day treat

I rarely post a recipe here but this one is so incredibly delicious and easy that I just have to. Kiwi has been one of my favorite magazines since becoming a mother, and this particular issue has 4 recipes that I have tried this week or plan to (sprouting garbanzo beans this very moment). I changed a few items in this recipe because I just didn’t have the items but they still turned out amazing. I know most of the people who read our blog are as busy as I am, so if I can do it, I bet you can too! : )

Where I deviated from the recipe is using peanut butter instead of cashew butter because I didn’t have any on hand. If you don’t have brown rice syrup you can just double the maple syrup.  (I’ve tried it both ways and I think I may like the doubled maple syrup just a little better). For those of you who live locally the PCC in Redmond carries puffed rice in the bulk section. I also added a handful of dried, unsweetened coconut flakes just for some additional texture. I have wrapped these bars up in wax paper for my husband this week and they make the perfect afternoon snack. I hope you love these as much as me.
